Daily Notes
I had to go run some errands this morning so I didn’t have breakfast, or even coffee, so I took some “on the road” as it were. I brewed some coffee into a Quality Foods coffee cup in case I went that way, and took some celery sticks & hummus to eat while I was “out and about”…
While out, I went to Canadian Tire and picked up a mat to go under my rowing machine, along with a brush for the snow on my car windshield (see photo to the right).
I didn’t really eat a proper meal till I got home this afternoon. At that point I had a salad with lemon juice, some soup with hash browns, and English muffin with jam. Oh, and two diet sodas as well! For dessert I had an orange.
This evening I had some kippered snacks, an air fryer oatmeal muffin, some popcorn, a coffee, and a diet soda.
I put up the bristol board on the door to the area I’m keeping my recycling bins in (see photo to the left). As you can see I also have the markers and Sharpies on the door for easy access. The great thing about this system is that the bristol board is attached via little hooks, so when I’m done this particular 30 day challenge I can start a different one!
Another great thing about having the bristol board here is that it’s directly in front of my rowing machine. So, as I’m rowing, I can see this board for inspiration as to what my body “Will Become”, after 30+ days…
Just before bed I had a salad with some lemon juice and hummus.

I asked Copilot for a new Oatmeal Biscuit recipe, and here is what it came up with:
Wheat-Free Air Fryer Oatmeal Biscuits
Ingredients:
- 1 cup rolled oats
- 1 cup oat flour (you can make this by blending rolled oats into a fine powder)
- 1/2 cup almond flour
- 1/2 cup brown sugar (or coconut sugar)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsweetened applesauce
- 1/2 cup plant-based milk (such as almond, soy, or oat milk)
- 1 teaspoon vanilla extract
- Optional: Raisins, vegan chocolate chips, or nuts
Instructions:
Prepare the Dough: In a large bowl, mix together the rolled oats, oat flour, almond flour, brown sugar, baking soda, baking powder, salt, and ground cinnamon.
Add Applesauce: Add the unsweetened applesauce to the dry ingredients and mix until combined.
Add Wet Ingredients: Pour in the plant-based milk and vanilla extract. Mix until just combined. If you’re adding any raisins, vegan chocolate chips, or nuts, fold them in gently.
Shape the Biscuits: Scoop about a tablespoon of dough and roll it into a ball. Flatten slightly and place it on a parchment-lined plate or tray.
Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
Cook the Biscuits: Place the biscuits in a single layer in the air fryer basket, ensuring they don’t touch each other. Cook for 8-10 minutes or until golden brown and cooked through.
Cool and Enjoy: Allow the biscuits to cool for a few minutes before transferring them to a wire rack. Enjoy your warm, freshly made wheat-free oatmeal biscuits!
