It’s a snow day for the kids today! No school! YIPPEE!

I was thinking of possibly purchasing a lottery ticket today, since tonight is the big draw, but we’re snowed in! So much for that! Is the Universe telling me not to waste my money?

Since we’re snowed in I got a chance to do some kitchen cleaning, which I’ve been wanting to do for a while. I finally found a place for my stainless steel mixing bowls and colanders, which is nice. At least nice to have them off the counter and tucked away somewhere.

I also got the chance to do a little baking today. I updated the Oatmeal Biscuit recipe I will be following on my “30 Day Diet Challenge”. You can see the product before and after air frying in the photo to the right. Here is the recipe:

Wheat-Free Air Fryer Oatmeal Biscuits

Ingredients:

  • 1 cup rolled oats
  • 1 cup oat flour (you can make this by blending rolled oats into a fine powder)
  • 1/2 cup almond flour
  • 1/2 cup brown sugar (or coconut sugar)
  • 1 tablespoon flax seed meal
  • 1 tablespoon chia seeds
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plant-based milk (such as almond, soy, or oat milk)
  • 1 teaspoon vanilla extract
  • Fold in: 1/4 cup raisins
  • Fold in: 1/4 cup dried blueberries

Instructions:

  1. Prepare the Dough: In a large bowl, mix together the rolled oats, oat flour, almond flour, brown sugar, baking soda, baking powder, salt, and ground cinnamon.
  2. Add Applesauce: Add the unsweetened applesauce to the dry ingredients and mix until combined.
  3. Add Wet Ingredients: Pour in the plant-based milk and vanilla extract. Mix until just combined. If you’re adding any raisins, vegan chocolate chips, or nuts, fold them in gently.
  4. Shape the Biscuits: Scoop about 1/2 cup dough via measuring cup and place it on a parchment-lined plate or tray.
  5. Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  6. Cook the Biscuits: Place the biscuits in a single layer in the air fryer basket, ensuring they don’t touch each other. Cook for 5 minutes, flip, then another 5 minutes, or until golden brown and cooked through.
  7. Cool and Enjoy: Allow the biscuits to cool for a few minutes before transferring them to a wire rack. Enjoy your warm, freshly made wheat-free oatmeal biscuits!

Here’s what I had to eat for lunch today:

  • Homemade veggie soup
  • Hash browns
  • English Muffin with PBJ
  • Olives
  • Hummus
  • Orange
  • Coffee with creamer
  • Diet coke

For an afternoon snack I had the homemade biscuit I mentioned above with some PBJ and 100 g salmon, and more coffee with creamer.

I thought I would re-watch the Netflix series “Live to 100: Secrets of the Blue Zones” again while I did my 30 minute rowing session this afternoon. In today’s “first episode” they talked about the people in Okinawa, and how 4x more of their population than America lives to be 100+ years old! The purple sweet potato is key, but also tofu, a sense of community, and their “mission” in life.

Oh, you can see the new mat under my rower in the photo to the left. That grease that I found in the barn the other day works great! Far better than WD-40!
