I spent quite a bit of time this morning working on getting a sitting position of Kirk in a chair. Once I had that I positioned him in the chair next to Evie on the 2nd floor coffee shop at Quality Foods in Courtenay!

In the Maggie Murphy video I watched today (ie: Manifesting a Specific Person: Why You Should Absolutely Ignore 3D Events), she said to just say: “I KNOW THAT THIS IS GOING TO HAPPEN FOR ME. I CHOOSE THIS THING AND I KNOW IT WILL HAPPEN, THEREFORE IT WILL HAPPEN. This will help you to start leading a peaceful existence.” Wonderful advice!
I felt good enough to venture out for supplies this evening. I ended up at Thrifty’s where I cashed in the tickets I bought last week, a free $2 Blackjack ticket, and a $10 winner on the “777” ticket! Well, the free $2 Blackjack ticket got me another Blackjack ticket, but alas, this was not a winner (See photo to the right).
After Thrifty’s I ended up at Costco where I purchased over $400 of groceries. It costs a lot in one punch, but as it’s BULK, this food lasts a long time!
This evening I made Maple Apple Oat Crumble recipe without butter or oil as per this Copilot recipe:
Ingredients:
- For the Filling:
- 4 cups apples, peeled, cored, and sliced
- 1/4 cup maple syrup (adjust to taste)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons spelt flour
- For the Crumble Topping:
- 1 cup spelt flour
- 1 cup rolled oats
- 1/2 cup maple syrup
- 1/2 teaspoon cinnamon
- A pinch of salt
- 1/4 cup unsweetened applesauce
Instructions:
- Preheat your air fryer: to 350°F (175°C).
- Prepare the filling:
- In a large mixing bowl, combine the sliced apples with maple syrup, cinnamon, nutmeg, lemon juice, and spelt flour. Toss until the apples are well-coated.
- Transfer the apple mixture to a heatproof dish that fits in your air fryer.
- Make the crumble topping:
- In another mixing bowl, combine spelt flour, rolled oats, cinnamon, and salt. Add the unsweetened applesauce and maple syrup. Mix until it resembles coarse crumbs.
- Assemble the crumble:
- Sprinkle the crumble topping evenly over the apple filling.
- Bake in the air fryer:
- Place the dish in the air fryer basket. Cook at 350°F (175°C) for about 20-25 minutes, or until the topping is golden brown and the apples are tender. Check the crumble halfway through to ensure it’s not burning, and adjust the time as needed.
- Serve: Let it cool slightly before serving. Enjoy it on its own, or with a scoop of vanilla ice cream or a dollop of whipped cream.
