The Amoxicillin that the doctor at Urgent Care prescribed last night is working wonders. I can feel all the “stuff” in my chest clearing up!

I picked up a crosswords puzzle book at the Chapters bookstore in Nanaimo yesterday (see photo to the right). It was on sale for $10, so I figure I could afford it since NVDA had another “blowout” quarter. Alas, despite this fact, NVDA and most stocks are down today. It appears that all this talk of tariffs is wearing on everyone, including the markets. I don’t need to sell any right now to pay the bills, which is nice…

I made some “Vegan Chickpea Blondies” via Copilot this evening. I thought I could get away with putting the “aqua fava” into the mix, but I was wrong…it came out too runny… Anyway, good to know for future reference. I made a sauce out of PB2, cocoa, maple syrup, and almond milk to go on top… Here’s the recipe:

Vegan Chickpea Blondies

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup almond butter (or any nut/seed butter)
  • 1/4 cup maple syrup (or agave nectar)
  • 1/4 cup coconut sugar (or brown sugar)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan chocolate chips (optional, but highly recommended!)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Blend chickpeas: In a food processor or blender, combine the chickpeas, almond butter, maple syrup, coconut sugar, and vanilla extract. Blend until smooth and creamy.
  3. Add dry ingredients: Add the baking powder, baking soda, and salt to the chickpea mixture. Blend again until fully combined.
  4. Fold in chocolate chips: If using, fold in the vegan chocolate chips by hand.
  5. Transfer to pan: Spread the batter evenly in the prepared baking pan.
  6. Bake: Bake for 20-25 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Cool and serve: Let the blondies cool completely in the pan before slicing and serving.
