I took my last antibiotic pill this morning and alas, I’m afraid that my pneumonia is still here. A week ago today I went to Urgent Care to get my second round of antibiotics. The doctor said that if this doesn’t work we might need to get a chest X-Ray… Seems so… Too late to call Urgent Care today, so I’ll hopefully be able to get an appointment with them tomorrow.

I haven’t had rice in a while, so I thought that I would cook up some rice in the Instant Pot and throw some shrimp from the air fryer on top of that. Add some sweet chili sauce, and some soya sauce of course, and you get the tasty meal you see in the photo to the right.

I was pretty exhausted today with all this coughing, but I did mange to add my first image to Chapter #4 of my new novel, an image of Evie in the Cole’s Bookstore in the Driftwood Mall in Courtenay! I then worked on creating images in GetImg.ai and incorporating them into PhotoPea for the second image of Kirk & Evie in the Quality Foods Second Floor coffee shop.

I was thinking of a dessert out of some “Spelt” flour and the protein powder that I picked up at Costco the other day. Here’s what Copilot suggested:

  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the brownies cool completely in the pan before cutting them into squares.

When I asked about frosting them, it suggested:

Great idea! How about a delicious, vegan-friendly Chocolate Avocado Frosting? It’s creamy, rich, and perfectly complements your brownies.

Ingredients:

  • 2 ripe avocados
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or agave syrup
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
  2. Add the cocoa powder, maple syrup or agave syrup, vanilla extract, and a pinch of salt.
  3. Blend until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
  4. Taste the frosting and adjust sweetness if necessary, adding more maple syrup or agave syrup if desired.
  5. Spread the frosting evenly over the cooled brownies.

Great choice! Combining spelt flour and oat flour can give your donuts a delightful flavor and texture. Here’s a recipe for Oil-Free and Eggless Air Fryer Donuts using a combination of both flours:

  2. In another bowl, whisk together the applesauce, almond milk, and vanilla extract.
  3. Combine the wet and dry ingredients, stirring until just combined. Be careful not to overmix.
  4. Preheat your air fryer to 350°F (175°C).
  5. Lightly grease a silicone donut mold with a little oil or cooking spray.
  6. Spoon the batter into the donut mold, filling each cavity about 3/4 full.
  7. Place the donut mold in the air fryer and cook for 8-10 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the donuts cool in the mold for a few minutes before transferring them to a wire rack to cool completely.

Maple Syrup Glaze:

  • 1/4 cup maple syrup
  • 2 tbsp almond milk (or any plant-based milk)
  • 1/2 tsp vanilla extract
  1. In a small bowl, whisk together the maple syrup, almond milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled donuts.
