Daily Notes

I’m really getting into the “Busting Loose From The Money Game” book. Tonight I finished Chapters #5 & #6. I like the experience of just sitting at my desk, reading this book, sipping some coffee, with music like NY Lounge Jazz (see photo to the right) playing in the background. Relaxing! If I let my mind visualize, it’s like I’m enjoying the right life of a NY millionaire… 🙂

I came across this YouTube video about “A Day In The Life Of Jeff Bezos” which I found interesting… Talks about his exercise schedule and “puttering” in the morning! “Crisp Document & Messy Meeting” (5:04 point). I would love to have all this money and be able to travel all around the year in a cruise ship! One day…

I’m running out of bread so I thought I would try making some “Spelt” Hamburger Buns! This gave me the opportunity to use my little kitchen thermometer for the first time to ensure that the water for the yeast was at the right temperature! I left the dough to rise for an hour, but it’s looking kinda “hard” (see photo to the left). Well, they didn’t raise as much as I would have liked, but they didn’t turn out too bad either (see photo to the right). Time to experiment a bit more with ingredients and times and such…

I put five images up into Chapter #2 of my new novel about “Kirk & Evie” this evening. Now to get one more image for Chapter #3 and move on…

Vegan “Oil Free” Hamburger Buns!

Ingredients:

  • 2 cups of spelt flour
  • 1/2 cup of warm water
  • 1/4 cup of non-dairy milk (such as almond, soy, or oat milk)
  • 1 packet of active dry yeast (about 2 1/4 teaspoons)
  • 2 tablespoons of honey (or another sweetener)
  • 1 teaspoon of salt
  • Sesame seeds (optional, for topping)

Instructions:

  1. Activate the Yeast: In a small bowl, mix warm water and honey. Sprinkle yeast over the mixture and let it sit for about 5-10 minutes until it becomes frothy.
  2. Combine Ingredients: In a large bowl, combine spelt flour and salt. Add the frothy yeast mixture and non-dairy milk. Mix until a dough forms.
  3. Knead the Dough: On a floured surface, knead the dough for about 5-7 minutes until it becomes smooth and elastic. If it’s too sticky, add a bit more flour.
  4. Let it Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  5. Shape the Buns: Punch down the dough and divide it into 6-8 equal portions. Shape each portion into a bun and place them on a piece of parchment paper. Cover them with a damp cloth and let them rise for another 20-30 minutes.
  6. Air Fry: Preheat your air fryer to 350°F (175°C). Carefully place the buns in the air fryer basket, leaving space between them. You may need to do this in batches. Optionally, brush the tops with water and sprinkle sesame seeds. Air fry for about 10-12 minutes or until golden brown. Keep an eye on them to prevent burning.
